- In one of the most revered culinary capitals of the world, the art of Italian cuisine is mastered at Apicius. Whether exploring Italian cooking for the first time or reacquainting you with the honored traditions of a sophisticated culinary art form, Apicius offers an expansive schedule of courses, ranging from beginning to specialized courses for trained chefs and hospitality majors. Programs in Culinary Arts, Wine Studies and Enology, Baking and Pastry, and Hospitality Management are offered at AISH. Advanced students participate in internships applicable to their area of study
Summer and semester students choose from a wide variety of courses in a range of disciplines, including Food and Wine Studies, Hospitality, Italian Studies and Linguistics, Liberal Arts, and Life Studies / Human Services. Courses are taught in English, except Italian language courses, and those courses whose descriptions clearly indicate that they are taught in Italian. There is no language prerequisite for Apicius students.
Program cost includes the following items: enrollment (including application, course selection and credit transfer), housing, student health insurance and meal plans. Students attending Apicius can receive US credits from Fairfield University in Connecticut, or an Italian transcript directly from Apicius.
