Food Science and Technology 10 (3 units): Food Science, Folklore, and Health
Ancient and modern food folklore in relation to health and well-being. Food safety, organic food, herbalism, food preservation, and nutritional enhancement. Not open for credit to students who have completed course 2. GE credit: Sci-Eng or SocSci

This course will explore world cultures, science and health through the eyes of food. Of special interest will be the development of Chinese food culture. In addition to the classroom, the course will consist of visits and local presentations on the historical development of Chinese food production. Students will also be presented the basic sciences, which support food science and culture. The integration of these sciences into what defines modern food science will also be covered. The course will located at Jiangnan University, Wuxi. Its School of Food Science & Technology is the number one food science program in China. Wuxi is located midway between Shanghai and Nanjing and is just south of the Yangtze River. It has a rich history of over 3,000 years and is the birthplace of the Wu culture. Wuxi is also dubbed little Shanghai because of its close proximity to the city and its fast urbanization and booming economy.

Upper-division units (open to freshmen through graduates). Taught in English. UC Davis courses taught by University of California, Davis faculty.

Setting Description:
Students will be staying in either the international dormitory in single rooms equipped with private bath or in shared appartments for international scholars at Jiangnan University. Both facilities are located on campus and within short walking distance to the classroom. Students will have access to the cafeterias on campus where they can purchase meals.
