Program Overview

Program Description:
Our goal is to emphasize the importance of Italian products, the seasonality of ingredients and the simplicity of our cuisine. Italian taste is simple; not an elaborate combination of exotic flavors. Through our program in Culinary Art we wish to impart a true sense of Italian taste and refinement, as well as our tradition and lore. Cooking is an art, and our goal is to shape and model artists in Italian Food. Food brings people together. A well-set table is a pleasure to see; the combination of ingredients is a joy to your taste buds, the smell of good food or wine cheers you up; the laughter of people sitting around a table is like good music.

A sample Semester program may include the following classes Semester I (Beginning Level) Italian Language, Intro to Professional Cooking, Tradition of Italian Food, Italian Regional Cuisine, Wine Appreciation, Introduction to Nutrition, Semester II (Intermediate Level) Bakery, Pastry & Confectionery, Tradition of Italian Food II,Creative Cuisine and Decoration, Restaurant Management, Wine Appreciation II, Italian Language. Students can attend one single semester, receiving a transcript of attendance, or complete one/two year, thereby receiving a Certificate in Culinary Arts.

Program cost includes the following items: enrollment (including application, course selection and credit transfer), housing, student health insurance and meal plans. Students attending Apicius can receive US credits from USF in Florida, or an Italian transcript directly from Apicius.
Setting Description:
Apicius is located in downtown Florence, a city renowned for its art, food wine and hospitality. A convenient 5 minute walk from the Central San Lorenzo area the school's central location provides students the opportunity to enjoy the city as an integral part of their program at Apicius. The faculty at Apicius are international; professors hold advance degrees in their area of expertise. Apicius chefs instructors are certified by the national association of professional chefs and each has years of experience in their field. Programs are offered on a regular 15 - week semester basis, along with two summer session, each four weeks in length. It is possible to complete one full semester of course work by attending two summer sessions. All programs are offered in English.

Summer Program starts at $ 4,250 for 3 weeks, One Semester Program starts at $ 9,950 and One Year Program starts at $ 14,750.
