Cutting methods, bases, sauces and condiments / Cooking methods / Vegetable & Cereals / Communication / Poultry & Meat / Management & administration / Aquatic produces / Basic pastry / Field trips / 3-month internship in a restaurant part of Ducasse Education's network.
